Job Summary
The Sous Chef – Indian Kitchen is responsible for assisting the Executive Chef in managing the preparation, cooking, and presentation of Indian cuisine while maintaining the highest standards of food quality, hygiene, and kitchen operations. The role requires strong knowledge of Indian cooking techniques, ingredients, menu execution, and kitchen procedures, along with proven leadership skills and the ability to manage a team effectively in a fast-paced hospitality environment.
Key Responsibilities
* Assist the Executive Chef in managing the day-to-day operations of the Indian kitchen.
* Supervise and coordinate the work of Chefs de Partie, Commis Chefs, and other kitchen team members.
* Prepare and oversee the preparation and cooking of Indian dishes according to established recipes and standards.
* Ensure consistency in taste, presentation, portion control, and overall food quality.
* Conduct regular quality checks and ensure all dishes meet the required standards before service.
* Plan and supervise mise en place and ensure adequate preparation for daily operations and service.
* Assist in menu planning, development of new dishes, and implementation of seasonal and special menus.
* Ensure proper handling, storage, labeling, and rotation of food items in accordance with FIFO practices.
* Monitor ingredient quality, freshness, and availability and coordinate with the relevant departments for timely replenishment.
* Control food wastage and assist in maintaining food-cost targets through effective production and portion control.
* Ensure strict compliance with food safety, hygiene, sanitation, and HACCP standards.
* Maintain cleanliness, organization, and discipline across the Indian kitchen and assigned work areas.
* Assist in managing buffet service, Ã la carte operations, banquets, special events, and other culinary requirements.
* Train, guide, and develop junior kitchen team members in Indian cooking techniques, hygiene, and standard operating procedures.
* Allocate daily duties and ensure efficient deployment of kitchen personnel during service.
* Monitor kitchen equipment and report maintenance requirements, malfunctions, stock shortages, and quality concerns to the Executive Chef.
* Take responsibility for the Indian kitchen in the absence of the Executive Chef, ensuring uninterrupted and efficient operations.
* Work closely with other kitchen sections and service teams to ensure smooth coordination and timely food delivery.
Qualifications & Experience
* Diploma or Degree in Hotel Management, Culinary Arts, or a related field preferred.
* Minimum 7-8 years of experience in a professional Indian kitchen, preferably in a luxury hotel or fine-dining restaurant.
* Previous experience in a Sous Chef, Junior Sous Chef, or senior Chef de Partie position is preferred.
* Strong knowledge of North Indian, Mughlai, Tandoor, and regional Indian cuisines.
* Proven experience in supervising and leading a kitchen team.
* Good knowledge of food safety, hygiene, sanitation, and HACCP standards.
